In the nineteenth century, much of the champagne that was shipped to the principal export market, Russia, was sweet. In a move to offer a drier style, the term demi-sec' (half-dry) was introduced to denote an off-dry Champagne.

The Mumm brothers, Jacobus, Gottlieb and Philipp, who were from a rich family of German wine merchants and who also owned vineyards in the Rhine valley, arrived in Reims in 1827. Along with their business partner Friedrich Giesler, they set up P.A. Mumm et Cie., the initials standing for the forenames of their father, Peter Arnold Mumm. 1853 was the Birth of G.H. Mumm et Cie and was a descendant of the founders, took over the company in 1853. It became and has remained to this day G.H. MUMM et Cie.

The widow Clicquot, one of the two most famous French women of all (the other being Joan of Arc), conferred international renown on the house that bears her name, founded in 1772 and today possessing a fabulous vineyard of 363 ha.

Following in the family tradition, David was given some Vineyards by his parents and he and his wife created the Bourdaire-Gallois label. David and his parents own 7.73 hectares of Vineyards between themselves and sell 65,000 bottles of Champagne each year. Production: The origin of the crus gives a good idea of the quality of the wine. The Pinot Noir is sourced from Aÿ, Mareuil sur Aÿ, Louvois, Bouzy, Tours sur Marne, Verzy and Rilly. The Chardonnay is sourced from Cramant, Mesnil-sur-Oger, Cuis and Vertus. And the Pinot Meunier is sourced from Venteuil, Cerseuil, St Martin dAblois and Chavot. These villages are ranked at the very high level of 93% on the échelle des crus scale.

Description: Fresh and medium-dry, this has an almost marmalade sweet citrus flavour and the lovely elegant style characteristic of this family-owned House.

The blend is made of wines from more than 55 crus or villages, and at least 10%, and sometimes over 20% of reserve wines are incorporated. After ageing for approximately three years, the wine is dosed with a liqueur made of cane sugar and wine from the same cuvée. Roughly 45 grams of sugar per litre are used.

To the uninitiated, Demi-Sec Champagnes can seem rather naff. However, the higher dosage of sugar actually balances perfectly with the natural acidity of the wine and makes it not only much more attractive to many consumers but also makes it a perfect end to a meal.
