In glass the wine shows a clean and brilliant pale straw colour with a hint of limey greenness around the rim. A complex nose tends towards a greener cool climate style of Sauvignon Blanc. An upfront herbaceouness is followed by a bombardment of green pepper, fig leaves, star fruit and limey aromas, ending with a flintiness. This is an expression of the excellent climate and soil on which these grapes were grown.

Partial oak ferment this wine is stunning. Aromatic but not overtly so, medium to full-bodied in the glass with ripe citrus fruit and good acidity. Elegance, power, flavour, balance and it gets better as you make your way towards the end of the bottle!

The grapes are picked by hand whilst still cold and make it to the tank 10 minutes after being picked. A pneumatic press and cool fermentation is used to capture all the fruit flavours and exotic aroma that Sauvignon has to offer.
