Heat up a little bit of lard/oil/butter in a pan and add some baby potatoes, baby carrots, peas and chopped French beans, chopped spring onions or cooking onions, a few sprigs of thyme, salt and pepper, cover and cook on a low heat until all the vegetables are cooked ans the potatoes have reached melt-in-the-mouth consistency. You can also add some chopped bacon for an authentic continental taste, and serve alongside a roast pork joint with crackling.
