The different varieties were destalked but not crushed and fermented in temperature controlled stainless steel at 25-28 degrees centigrade using selected Rhone yeasts. After primary fermentation the wines were racked off and sent back to tanks for malolactic fermentation. This lasted 2 to 3 months. The wine was then sent to older barrels for approximately 7 months. No new wood is used.

The nose shows lovely ripe cherry characters, backed up by smoky coffee and spice notes. The palate is soft with nice weight and structure.
