Marsala is a DOC wine made in the province of Trapani in Sicily. For the Terre Arse wine, Florio uses only the finest Grillo grapes with a high sugar ripeness grown along the coast to the north of the town of Marsala, right alongside the "saline", or salt pans. After being carefully selected, the grapes are pressed. The resulting must is left to ferment. Once the fermentation is completed, a very robust and full-bodied base wine is obtained. The family owned Piersanti winery was founded by Giovanni Piersanti in 1955 and is today run by his grandsons, Ottavio the winemaker and Giuliano. Giovanni’s first ‘winery’ was no more than a small room but today the family have a modern cantina of 2000 sq.m and a capacity of over 20,000 quintals of wine in stainless steel tanks.
