On the palate the wine is medium-bodied with rounded, supple tannins and good weight of cassis fruit lifted on the finish by an elegant acidity.     It all started with a suggestion by a wine buyer - the man humorously suggested the creation of a Rhone style blend called "Goats do Roam". Charles Back took the ball and ran with it and the result is the creation of the hugely succesful Goats do Roam Wine Company. An innovative blend of Shiraz, Cinsault, Carignan and Mourvedre with a dash of the local Pinotage, the wine impresses with both the humourous packaging and the sheer drinkability.     Grapes are picked once optimal ripeness has been reached. Most of the Viognier was whole bunch pressed, while the other varietals were destalked and lightly crushed. All wines were cold fermented in stainless steel tanks. After fermentation the individual components were left on their gross lees briefly prior to racking, blending and bottling for early enjoyment.

    The different varieties were destalked but not crushed and fermented in temperature controlled stainless steel at 25-28 degrees centigrade using selected Rhone yeasts. After primary fermentation the wines were racked off and sent back to tanks for malolactic fermentation. This lasted 2 to 3 months. The wine was then sent to older barrels for approximately 7 months. No new wood is used.

    Goats Do Roam Goat Roti 2009 / 2010

    Dark fruit, sweet oak spice and notes of leather meet on a complex nose. Mulberry and plum continue to the palate, followed by clove and black pepper length. Ripe flavours are well-balanced with fruit acidity and firm structure. Pump-overs were done three times a day ensuring good colour and flavour extraction. Once pressed, the wine was transferred to 225l French and American oak barrels and matured for 15 months, with 10% new wood being used.
