Carving Knives and Forks Buying Guide

Slicing meats (cooked), fish or poultry can be very difficult without the help of carving knives and forks. A carving knife is also called a slicer which will have either a pointed tip or rounded tip with a non-serrated blade. The one with the pointed tip is useful for cutting around a bone, while the rounded tip knife is used to carve large boneless pieces of meat.  Grilled meat, tenderloins and small sized filet roasts can be sliced using short blade carving knives.  Carving forks help you hold the food item in place during the slicing process. 

Materials

The blade can be made of carbon steel, titanium, high carbon stainless steel, stainless steel, ceramic and laminated. 

Carving knives and forks can have handles made of wood, which will provide a good grip while slicing flesh. However, they are prone to crack or warp with prolonged exposure to water.  Plastic handles are lighter but are also slippery in the hand.  Knives and forks need to be durable with handles made of wood, rubber, plastic or stainless steel for good grip.

Carving Knives and Forks Selection Criteria

  • Bigger roasts without bones can be sliced using rigid blades and poultry with flexible blade. The same manner hot roasts can be sliced easily using wider blades, while narrow carving knife blades are suitable for cured Salmon or smoked Ham.
  • Pointed tip carving knives are suitable for meat with bones and round tip carving knives are suitable for fish and boned meat.
  • The prongs of the carving forks can be chosen either straight or curved based on the purpose of use.
  • Normally carving knives and forks of best quality are forged. Stamped knives are also acceptable, but they tend to be very flexible than forged knives.
  • Look for a longer blade, 9 inches or more, so that you'll have room to slice back and forth with minimal sawing.
  • Some carving knives come with fluted edge on the blade to prevent meat from sticking.
